Vegan Beans from Around the World by Kelsey Kinser is a great, unique cookbook to have on hand in every vegan household. Beans are an amazing source of protein for vegans and they can be much healthier than store-bought, processed, fake meats. Beans as a base also make vegan, gluten-free cooking so much easier. I’m a huge bean-believer because they’re so versatile. You can make burgers, dips, salads, and more with these little protein packed gems. Kinser’s cookbook is great because it features recipes from around the world and so its gives you lots of unique flavors to try, plus there are plenty of tasty recipes to suit your mood!

As a little sneak peak into this gem, I’ve included one recipe from the book below! It is super easy and quick to make, unbelievably so, and tastes wonderful! You could use this as a side dish or add some grilled tempeh, guac, vegan sour, and a tortilla and have an awesome burrito or wrap!

This Southwestern Style Recipe from Vegan Beans from Around the World is super easy to make and tastes great!

Southwestern Style Salad

From Vegan Beans From Around the World

Ingredients

1/3 cup olive oil

1 lime, juiced

½ tsp salt

1 tsp chili powder

½ tsp ground cumin

3 cups of cooked pinto beans (approximately 1 cup dried or 2 15-oz cans) VegetarianSnob’s note: I used 1 can of black beans and 1 can of pinto

1 ½ cups corn

1 green pepper diced (I used half an orange, red, and green diced, which I sautéed beforehand because I’m not a huge fan of raw peppers)

½ red onion diced

3 tomatoes (I used 1/2 cup  cherry tomatoes)

4 green onions, chopped

¼ cup fresh cilantro, chopped

 Directions

1. In a large bowl combine your olive oil, lime juice, salt, chili powder, and ground cumin.

2. Add the remaining ingredients and toss together to combine. Serve chilled or at room temperature.
