I have to admit, before Polska Foods suggested we try their vegan pierogi, I didn’t even know what a pierogi was! But I am super happy that I did! Its sort of like ravioli and sort of like a dumpling, that’s how I best describe it! I had all these big plans to cook an elaborate meal to feature these little guys in, but I couldn’t help myself and just ate them with butter, nooch (aka nutritional yeast!), garlic, and pepper once they were done boiling! You can also fry them up, but I didn’t actually end up trying this because I loved them boiled so much!
So, fun little pierogi facts, they’re actually Polish and the mushroom sauerkraut version of pierogis are actually authentically (yes!) vegan! Don’t be afraid of the word sauerkraut. I like sauerkraut, but know that it can be pretty intense for those who aren’t used to it. These little babies are stuffed with a mixture of caramelized onions, crimini mushrooms, fresh cabbage, and real sauerkraut. So, what is “real” sauerkraut? Well thanks to Polska Foods, I now know, and so with you (who knows this could be a jeopardy question someday!). So here’s the scoop, it all has to do with the preparation process! The sauerkraut that we’re used to is done quickly so it takes a lot of vinegar added to the sauerkraut making it pretty tart! But this sauerkraut is made the old fashioned way, by just using water, salt, and time. So there’s a lot of the tartness that disappears! So these little babies taste fresh and gourmet, perfect for us vegetarian snobs.
