It’s exciting to finally have time to follow some of the amazing blogs I discovered this month, but it’s also sorta sad it’s over, maybe this is the Stockholm syndrome of blogging. But without further adieu, I’m bringing you your favorite posts throughout the month of September/Vegan MoFo, just in case you might’ve missed one!

This month I posted a record-breaking (in VegetarianSnob history), 24 vegan recipes this month! And now for your top 10 most popular vegan recipes of this month:

10. Healthy Pumpkin Pie Baked Oatmeal

The texture of this particular recipe is more “bar” like than baked oatmeal like, but it is also great warmed up with a splash of almond milk!This is more on the savory side, so if you want it sweet, like pie, I suggest adding brown sugar on top, or more maple syrup into the mix. Make sure you double check your ingredients to guarantee that they are actually gluten-free, sometimes gluten sneaks it’s way in!

But this vegan pumpkin spice latte pudding hits the spot for a perfect breakfast! Or midday pick me up! Top it off with some cinnamon and raw pepitas (aka pumpkin seeds without the shells) and you’ve got a great snack or breakfast!

It tastes like fall, but the bread is still moist and the delicate coconut paired with the cinnamon and cardamom give this cake a nice balance of flavors. For an extra sweet version, you could top this cake off with some brown sugar! Or for an extra treat, sprinkle the top with pepitas!

7. Quick & Simple Classic Gone Vegan Poblano Grilled Cheeze with Tempeh Bacon

So this recipe uses store bought vegan cheese and if you’re like me, you might find the flavor a bit strong. But with this recipe the garlic paired with the poblano and butter, the flavor of the vegan cheese is a little more muted and the flavor resembles the all american childhood favorite! Plus this way you don’t have to worry about creating your own cheese!

6. Fall Sweet Potato One Pot Chili Bowl With Lentils and Quinoa

The hearty, “meaty” lentils mixed with the sweetness of the sweet potatoes, and finally matched to the nooch-y cheese sauce, this dish, although simple to prepare, has complex flavors! There’s quinoa, lentils, sweet potato, nooch, white beans, kidney beans, and a smoky poblano! Pair this chili with some vegan cornbread and you’ll have a perfect, crisp, fall weather recipe!

These cinnamon rolls are decadent, crispy on the outside, super delicate and soft on the inside, and topped with the pumpkin maple glaze, these are moist, and you would never guess they’re vegan!

Today’s post is for a quick and easy, creamy, vegan penne rosa. The recipe is super easily adaptable, so if you like basil heavy pastas, just add more fresh basil. If you want yours creamier, use canned coconut instead of plain non-dairy milk. 

2. Fall Pumpkin Spice Cardamom Vegan Chocolate Chip Cookies

But the flavors are also not overwhelming, there’s a perfect balance between sweet and spice. The cookies not only remind me of fall, but of chai teas and that’s what I love most about them and one of the bagillion things I love about fall!

1. Vegan Lentil “Meatball” Penne Rosa Sandwich

For this dish you’ll  want to play with seasonings and match them to your preferences. I used thyme, oregano, and italian seasoning for mine, but I also imagine a rosemary or sage or smoky lentil “meatball” would be excellent too! You can use these vegan lentil “meatballs” on top of some bread and have a sandwich, but they would also be great in some spaghetti or vegan alfredo even!
